I love plums. :) They are by far my favorite stone fruit. I discovered the plum crumble (Plumble!) a few years ago, and I find it is the perfect dessert to capture the tart plum taste with just enough sweetness to make it irresistible. I've tried several plumble recipes, and this recipe is sort of a best of mix up.
I strongly recommend you try this one while the plums are still ripe!
3 pounds of fresh plums, pitted and sliced
1 cup all-purpose flour
1 cup granulated sugar
1/4 cup brown sugar
1/2 teaspoon of salt
1/2 teaspoon of cinnamon
1 large egg, beaten
1/2 cup butter melted
1/2 cup quick cook oats
How-to: In a large bowl, mix plums and brown sugar. Make sure the brown sugar coats as much of the plums as possible. Pour mixture into a 11.5 x 7.5 inch buttered baking dish. In a separate bowl, mix the flour, granulated sugar, salt and cinnamon. Add the beaten egg, stirring lightly with fork until mixture begins to get crumbly. Pour crumbly mix over plums evenly. Then spread oats evenly over the top. Coat the top of the oats with melted butter. Bake dish at 375 degrees for 40 to 45 minutes until golden. Serve solo or with whipped topping or ice cream.
