Let me start with a Wednesday Confession:
I look longingly at the well-lit photos on my favorite blogs. As a gal who works a full-time day job, most of my blogging is done on the nights and weekends. So most of the time my pictures have the dull glow of artificial light.
It’s a small thing I guess, but I love the beauty of a well shot naturally lit photo.
That said, trust me when I tell you, natural light or not, this recipe is a winner. I meant to make Peanut Butter Kiss Cookies, but when Costco didn’t have a hershey kisses I decided m&m cookies would be just as good. I was correct.
Peanut Butter M&M Cookies
>recipe makes two dozen
+ 1/2 cup of sugar
+ 1/2 cup of brown sugar
+ 1/3 cup flour
+ 1 egg
+ 1 cup creamy peanut butter
+ 2 cups of m&ms
Mix all ingredients except for the m&ms (I used my kitchenaid mixer) until ingredients are well blended (took less than a minute for me). Make sure to scrape any extra ingredients from the sides and bottom of the bowl and then mix a little bit longer.
I put the dough in the refrigerator for about 1 hour to let it chill. Pre-heat the oven to 350 degrees Farenheit.
Roll the dough into 1 inch balls and then place them onto baking sheet lined with parchment paper.
Bake the cookies for 12-15 minutes depending on your oven.
Pull the cookies from the oven and quickly press as many m&ms as you would like into the cookies gently.
Use a spatula to carefully place the cookies on a wire rack to cool.
