I was planning to cook red beans 'n rice this week until the h-band got involved.
The conversation went a little like this:
Me: "I'm going to make red beans 'n rice for this week's cajun recipe."
H-band: "Red beans 'n rice? You must mean Jambalaya! Why would you make red beans 'n rice when you can make jambalaya?!"
He really wanted Jambalaya, and given how much we love gumbo (and how Jambalaya is basically the risotto version of gumbo), I gave in. Not surprisingly, I don't regret it.
I've been focusing on cajun recipes for Golden February (each month I'm trying to make new recipes with a different focus). So far this month I've focused on the sweet (surprise, surprise). I've made prailines and moonpies.
The Jambalaya was absolutely delicious, and I'm glad we made the shift to savory. I think I still prefer the gumbo, but Jambalaya is significantly faster and easier than making gumbo.

The best thing about the Jambalaya is there are going to be leftovers for days. Love it.
