I am pausing our vacay recaps to bring you this tasty recipe I made up over the weekend. It’s simple and fruity and a la mode!
I have always preferred the plum side of the stone fruit family over the nectarine/peach side of the stone fruit family. and then we went to France. and the hubby suddenly revealed a secret nectarine love, and we ended up buying nectarines at every farmer’s market we could find. and somehow, I decided I loved them too. Life is funny.
So this weekend I pulled out a few of our ramekins, and I made an lazy version of a crumble with my new favorite stone fruit:
+ 4 large, ripe nectarines
+ 1 cup of quick cook oats
+ 1 cup of flour
+ 1 cup of sugar
+ 1/2 cup of brown sugar
+ 1 tablespoon of cinnamon
+ 1/2 cup of butter melted (more if you like a richer crumble)
+ vanilla ice cream!
>> You also need 8 ramekins. 🙂
+ Step 2: Cut Nectarines in half, scooping out the pit and all the “pitt-y” center so that you have a nice, smooth center of each half. Place the nectarines in ramekins (we also put a few in small pirex containers).
+ Step 3: Pre-heat oven to 325 degrees.
+ Step 4: Scoop two tablespoons of the crumbly mixture into the nectarine center.
+ Step 5: Place ramekins in the oven and cook for 45 minutes.
+ Step 6: Remove ramekins from oven and top with a scoop of vanilla ice cream.
+ Step 7: Serve & Enjoy!!!
