Apparently, he really likes salads (you might remember his Easy Chicken Salad recipe from a few months ago). Given that I used to hate salads, I’m always excited to find a new salad recipe that I like, and the hubs surprised me with this one out of nowhere.
The best thing about this salad is that it helps us get rid of leftovers (we are so bad at that). For our friend Connor’s birthday on Sunday I fried up some chicken strips, breasts, and drumsticks in buttermilk and my own batter mixture (which I should totally blog about in the future), and Viet used the leftover strips along with some leftover bacon and other veggies to throw this together.
Total Prep Time: 10 minutes
Makes enough for: 2
- fried chicken strips (homemade or bought from under a heat lamp at your local grocery store), cut into chunks
- 1 avocado, chopped into chunks
- 6 leaves of romaine lettuce, chopped
- 4 strips of bacon (We used leftovers.)
- 2 cups of arugula
- 2 Roma tomatoes, chopped
- Ranch dressing
As usual, Not Merely Husband’s recipes are stupidly easy. You just chop up all of the ingredients and mix them together. Voila!
You can’t go wrong. This salad is definitely filling enough to eat for dinner.
